To investigate and develop new nutritionally balanced food products with nutritional claims.

Objectives

  • To create a healthy breakfast kit for Millennials

  • 3 new food products enriched with nutritional and functional elements to stimulate satiety and to surpass nutrional needs

  • Low sugars, low salt and rich in omega-3

  • To identify the main technological strategies for the incorporation of these ingredients (dairy products, fruit preparations and cereals/cookies)

Results

  • Innovative preparations which allow the color and flavour characterization of neutral doughs, such as cookies and cereal bars;
  • With these preparations it is possible to create healthier and more appealing snacks: colorful and healthier cookies and cereal bars, with high fruit content;

  • It contains the equivalent of 1,98 times its weight in fruit;

  • Natural colorants and flavorings, oven stable, which allow to keep color and flavor during and after the baking process.
